Rundschreiben Berlin zusammen mit den Partnern&nbsp;<a href=\"http:\/\/www.berlin-partner.de\/\" target=\"_blank\" rel=\"noreferrer noopener\">Berlin Partner f\u00fcr Wirtschaft und Technologie<\/a>,&nbsp;<a href=\"http:\/\/www.visitberlin.de\/\" target=\"_blank\" rel=\"noreferrer noopener\"><em>besuchen Sie<\/em>Berlin<\/a>,&nbsp;<a href=\"http:\/\/www.healthcapital.de\/\" target=\"_blank\" rel=\"noreferrer noopener\">GesundheitKapital<\/a>, und&nbsp;<a href=\"https:\/\/www.berlin-partner.de\/nc\/landingpages\/beshared\" target=\"_blank\" rel=\"noreferrer noopener\">BeShared<\/a>&nbsp;veranstaltete unseren dritten Multi-Stakeholder-Workshop zum Thema Potenziale der Kreislaufwirtschaft f\u00fcr Lebensmittel- und Biomassestr\u00f6me in Berlin und Berlin Religion. W\u00e4hrend des Workshops wurden die Herausforderungen der Lebensmittelverschwendung, der nicht nachhaltigen Landwirtschaft und der alternativen M\u00f6glichkeiten des Umgangs mit Biomasse angesprochen. Der Branchenschwerpunkt lag auf dem Berliner Gastgewerbe und der Frage, wie die Vision der Kreislaufwirtschaft in die t\u00e4gliche Praxis umgesetzt werden kann. Wir haben uns sehr gefreut, dass wir mehr als 70 Fachleute aus verschiedenen Bereichen des Sektors begr\u00fc\u00dfen durften und einen Dialog zwischen lokalen Lebensmittelproduzenten, Zero-Waste-Catern und Organisationen, die sich mit der Vermeidung von Lebensmittelabf\u00e4llen besch\u00e4ftigen, f\u00fchren und diese Diskussion mit dem nachhaltigen Ansatz der Bio\u00f6konomie verbinden konnten.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<div class=\"wp-block-buttons is-layout-flex wp-block-buttons-is-layout-flex\">\n<div class=\"wp-block-button has-custom-width wp-block-button__width-100 is-style-big-white-2 is-style-big-white-2--1\"><a class=\"wp-block-button__link wp-element-button\" href=\"https:\/\/drive.google.com\/file\/d\/1XnpAMEjlm_1GBn45fBU4BfVPkjEUEysz\/view\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Pr\u00e4sentation und Workshop-Ergebnisse<\/strong><\/a><\/div>\n<\/div>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>Die Herausforderungen sind immer noch da<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/circular.berlin\/wp-content\/uploads\/2019\/03\/7.png\" alt=\"\" class=\"wp-image-3973\"\/><\/figure>\n\n\n\n<p>Bei der Vorbereitung haben wir festgestellt, dass das Thema nicht nur f\u00fcr Berlin sehr wichtig, sondern auch sehr sensibel ist. In Berlin wurde bereits viel Arbeit im Bereich der Vermeidung von Lebensmittelabf\u00e4llen geleistet, aber das verschwenderische Verhalten dominiert immer noch. Der N\u00e4hrstoffzusammenhang zwischen Biomasse und Landwirtschaft ist noch nicht ausreichend erforscht, was eine gro\u00dfe H\u00fcrde auf dem Weg zu einer nachhaltigen Agrarpolitik darstellt. Dar\u00fcber hinaus erlaubt die fehlende Vernetzung zwischen Lebensmittelproduzenten und Verbrauchern (wie Einzelhandel, Restaurants) in Berlin und der Region nicht, Angebot und Nachfrage f\u00fcr eine nachhaltige Produktion aufeinander abzustimmen.<\/p>\n\n\n\n<p>Auf der anderen Seite wurden weiche Ma\u00dfnahmen wie Bildung und Kommunikation breit diskutiert. Die Einf\u00fchrung abfallfreier Lernpraktiken in das Ausbildungssystem junger K\u00f6che ist eine sehr wichtige Ma\u00dfnahme. Und nat\u00fcrlich wurde auch die Frage der strengen Hygienevorschriften angesprochen, die in den meisten F\u00e4llen zu einer direkten Lebensmittelverschwendung f\u00fchren, was ein gro\u00dfes Diskussionsthema war.<\/p>\n\n\n\n<p><strong>Was ist mit Biomasse und Lebensmittelnebenprodukten?<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"400\" src=\"https:\/\/circular.berlin\/wp-content\/uploads\/2019\/03\/5.png\" alt=\"\" class=\"wp-image-3972\" srcset=\"https:\/\/circular.berlin\/wp-content\/uploads\/2019\/03\/5.png 1200w, https:\/\/circular.berlin\/wp-content\/uploads\/2019\/03\/5-18x6.png 18w, https:\/\/circular.berlin\/wp-content\/uploads\/2019\/03\/5-300x100.png 300w, https:\/\/circular.berlin\/wp-content\/uploads\/2019\/03\/5-768x256.png 768w, https:\/\/circular.berlin\/wp-content\/uploads\/2019\/03\/5-1024x341.png 1024w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<p>Ein weiteres wichtiges Thema, das wir im Workshop zu behandeln versuchten, ist der innovative Ansatz zur Verwendung von Lebensmittelabf\u00e4llen oder unvermeidbaren Lebensmittelabf\u00e4llen wie Gem\u00fcseschalen. Stellen Sie sich vor, Sie k\u00f6nnen Ihre Lebensmittelversorgung optimieren, abfallfrei kochen, aber es bleiben einige Reste wie Eierschalen \u00fcbrig. Eine der H\u00fcrden war die zentralisierte Infrastruktur, die es nicht erlaubt, die Str\u00f6me genau zu sortieren und sie in den meisten F\u00e4llen zu verunreinigen. Es wurde sehr oft erw\u00e4hnt, dass eine Wertsteigerung dieser Biomasse nur m\u00f6glich ist, wenn man direkt mit dem Eigent\u00fcmer der Biomasse zusammenarbeitet, z. B. direkt mit den Restaurants. Au\u00dferdem ist das Thema f\u00fcr viele Lebensmittelproduzenten und auch f\u00fcr Forscher noch sehr unerforscht und unklar:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Was sind die Str\u00f6me?<\/li>\n\n\n\n<li>Wie viel von dieser Biomasse k\u00f6nnte tats\u00e4chlich verwertet werden?<\/li>\n\n\n\n<li>Wie kann man sich nicht nur auf das \u201cmarktorientierte Produkt\u201d konzentrieren, sondern auf das Produkt, das in den Biokreislauf zur\u00fcckgef\u00fchrt werden kann, um die N\u00e4hrstoffl\u00fccken zu schlie\u00dfen?<\/li>\n<\/ul>\n\n\n\n<p>Dies sind die Fragen, die eine fundierte Forschung und Analyse erfordern.<\/p>\n\n\n\n<p>Unterm Strich sind wir uns jedoch alle einig, dass die Einstufung von Biomasse als Bioabfall unangemessen ist.
