Das Ziel ist es, die entscheidenden Faktoren zu identifizieren, die die Transformation der K\u00fcchen im Gastgewerbe in Richtung einer Kreislaufwirtschaft vorantreiben werden.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Die Herausforderung<\/strong><\/h3>\n\n\n\n<p>Tourismus und Hotels haben Auswirkungen auf die Nachhaltigkeit: durch ihren Verbrauch von Lebensmitteln, Wasser und Energie, durch die Erzeugung von Abfall, durch die von ihnen gekauften Produkte und die damit verbundene Logistik, sowie durch die Beziehung zur Umgebung und zu lokalen Gemeinschaften. Sch\u00e4tzungen zufolge verschwenden Hotels und Restaurants, die kein \u00dcberwachungssystem f\u00fcr Lebensmittelabf\u00e4lle haben, 3-8 Mal mehr als sie denken.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Unser Ansatz<\/strong><\/h3>\n\n\n\n<p>Das aktuelle Pilotprojekt zielt darauf ab, sich auf Aktivit\u00e4ten im Bereich der Lebensmittelversorgung und -verarbeitung zu konzentrieren. Dies betrifft in erster Linie die K\u00fcche, Restaurants, Beschaffung (Lebensmittel) sowie damit verbundene Aktivit\u00e4ten in der Hotelgastronomie.<\/p>\n\n\n\n<p>Das \u00fcbergeordnete Ziel des Projekts ist es, die Transformation der Hotelgastronomie weiter in Richtung Kreislaufwirtschaft voranzutreiben. Das bedeutet, \u00fcber Abfallvermeidung und Ressourcenschonung hinauszugehen und die Hotelgastronomie sowohl als eigenst\u00e4ndiges System als auch als Teil eines gr\u00f6\u00dferen Systems und Netzwerks zu betrachten, um Material- und Ressourcenfl\u00fcsse in Bezug auf ihre Kreislauff\u00e4higkeit zu optimieren.<\/p>\n\n\n\n<p>Das Projekt wurde in zwei Phasen unterteilt:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Phase 1: Inhaltliche Recherche zum Thema \"Zero Food Waste\" in der Hotelgastronomie. Erstellung des Berichts \"Circularity through zero waste approaches in hotel gastronomy\". Der Bericht f\u00fchrt in das Thema Zero Waste und Kreislaufwirtschaft in der Hotelgastronomie ein und empfiehlt Handlungsm\u00f6glichkeiten.<\/li>\n\n\n\n<li>Phase 2: Zusammenarbeit mit dem Seminaris Hotel als Partner zur Erprobung und Validierung der Ma\u00dfnahmen zur Umsetzung von Kreislaufwirtschaft in der K\u00fcche. Benutzerschulung und Forschung zur Bestimmung der Systemgrenzen, Herausforderungen und Potentiale. Workshops mit dem Seminaris Hotel wurden durchgef\u00fchrt, um Schulungen zum Zero Waste-Ansatz auf der Grundlage des Berichts aus Phase 1 anzubieten und Chancen f\u00fcr die Umsetzung zu identifizieren. Die Workshops decken die Themen Lebensmitteleinkauf und -lagerung, Zubereitung und Verarbeitung, Kommunikation, Entsorgung und weitere Verarbeitung sowie Management ab.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Das Ergebnis<\/strong><\/h3>\n\n\n\n<p>Das Kernelement des Projekts ist der Wissenstransfer: erstens vom Circular Berlin und den Experten zum Seminaris-Hotel, zweitens an die \u00d6ffentlichkeit auch in Form von Online-Lernmaterialien, die auf&nbsp;<a href=\"https:\/\/tourismushub.visitberlin.de\/\">TourismusHub Berlin<\/a>.
